Ingredients:
- 2 pounds ground turkey
- 1 pound turkey bacon
- 1/2 cup barbecue sauce
- 1/4 cup shredded cheddar cheese
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 1/4 cup diced jalapeno pepper optional
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- Toothpicks for securing bacon
Instructions:
Set the temperature of your smoker or grill to 250F 121C
Ground turkey, diced onion, diced bell pepper, diced jalapeo pepper if using, garlic powder, onion powder, black pepper, and salt should all be combined in a mixing bowl
Blend thoroughly
To make a bacon mat, spread out a piece of aluminum foil and weave the turkey bacon into a lattice pattern
Spread out evenly half of the spiced ground turkey mixture onto the bacon mat
Over the turkey mixture, drizzle half of the barbecue sauce and half of the shredded cheddar cheese
Using the foil to help shape it, carefully roll the ground turkey mixture and turkey bacon into a log
Using toothpicks, fasten the ends to keep it from unraveling
To make the second log, repeat the process with the remaining ground turkey mixture, barbecue sauce, and shredded cheddar cheese
After covering both turkey logs with bacon, place them on the grill or smoker and cook for two to three hours, or until the internal temperature reaches 165F 74C
Baste every thirty minutes with additional barbecue sauce
When cooked, take the turkey bacon explosions off the smoker or grill and allow to cool slightly before slicing into thick rounds
If desired, top hot dish with additional barbecue sauce
