Egg and Spinach Breakfast Wrap



A delicious and filling breakfast wrap with eggs, spinach, and whole-grain tortilla to kickstart your day while working towards your weight loss goals.

Ingredients:

  • 2 whole eggs
  • 1 cup fresh spinach leaves
  • 1 whole-grain tortilla or wrap
  • 1/4 cup diced tomatoes
  • 1/4 cup diced red onion
  • Hot sauce optional
  • Salt and pepper to taste

Instructions:

Add salt and pepper to a bowl and beat the eggs

Put a nonstick skillet on medium heat and spray it with cooking spray or drizzle it with olive oil

Toss the diced tomatoes and red onion in the pan and cook for two to three minutes, until the onions are soft

It will take another minute or two of cooking after adding the fresh spinach leaves for them to wilt

Add the eggs that have been beaten to the vegetables in the pan

For about 3 to 4 minutes, scramble the eggs until they are fully cooked

Warm up the whole-grain tortilla in the oven or in the microwave

In the middle of the tortilla, put the scrambled eggs and vegetable mix

If you want, add hot sauce

Make a wrap by folding the tortilla's sides in and rolling it up

Enjoy your egg and spinach breakfast wrap while it's still hot
