You can still enjoy fluffy, tasty pancakes without gluten. For a healthy breakfast or brunch, these banana pancakes are great.
Ingredients:
- 2 ripe bananas, mashed
- 2 eggs
- 1/2 cup almond flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon cinnamon
- 1/4 teaspoon vanilla extract
- Optional: maple syrup, fresh berries for serving
Instructions:
Mix eggs and mashed bananas together in a bowl until everything is well mixed
Put in the baking powder, cinnamon, vanilla extract, and almond flour
Mix until it's smooth
Set a skillet that doesn't stick on medium heat
Small amounts of the batter should be poured onto the pan
It should be cooked for two to three minutes on each side until it turns golden brown
If you want, you can serve it warm with maple syrup and fresh berries
