Salmon en Croute is a classic French dish featuring succulent salmon fillets wrapped in buttery puff pastry. The creamy spinach filling adds a burst of flavor, making it a perfect choice for a special dinner or entertaining guests.
Ingredients:
- 2 salmon fillets
- 1 sheet of puff pastry
- 100g spinach leaves
- 100g cream cheese
- 1 lemon, zest and juice
- Salt and pepper to taste
- 1 egg, beaten for egg wash
Instructions:
Preheat oven to 200C 390F
Season salmon fillets with salt, pepper, and lemon zest
Spread cream cheese over one side of each salmon fillet
Layer spinach leaves on top of the cream cheese
Squeeze lemon juice over the spinach
Place each salmon fillet on a portion of puff pastry
Fold the pastry over the salmon, sealing the edges with egg wash
Brush the top of the pastry with egg wash
Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and the salmon is cooked through
